Frequently asked questions about food temperature safety
Food safety isn’t just about following the rules, it’s about understanding the risks. We’ve answered some of the most common questions to help you take the next step with confidence.
What is the danger zone temperature for food in the UK?
The food safety danger zone ranges from 8°C to 63°C. This is where harmful bacteria multiply fastest, increasing the risk of food poisoning.
How long can hot food stay below 63°C?
Hot food can legally remain below 63°C for up to 2 hours, but only once. After that, it must be served, cooled safely, or discarded.
Can cold food be kept above 8°C during service?
Yes, cold food can be held above 8°C for up to 4 hours, but this exception should only be used once. It’s intended for temporary display, not daily storage.
